M&aring;nga med mig h&aring;ller det grekiska k&ouml;ket f&ouml;r ett av de b&auml;sta i v&auml;rlden. Nyligen vann en kretensisk kvinna, bosatt i Storbritannien, titeln Masterchef UK, som anses vara den mest prestigefyllda amat&ouml;rkockt&auml;vlingen i v&auml;rlden (det &auml;r den som &rdquo;Sveriges M&auml;sterkock&rdquo; bygger p&aring;).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">D&aring; &auml;r det v&auml;l bara att &aring;ka till Grekland och &auml;ta all den d&auml;r fantastiska maten? Men den fr&auml;msta orsaken &auml;r att grekernas restaurangkultur h&auml;nger kvar p&aring; ungef&auml;r samma st&auml;lle som den svenska gjorde p&aring; 80-talet. Om detta har jag skrivit <a rel=\"noreferrer noopener\" aria-label=\"h&auml;r (&ouml;ppnas i en ny flik)\" href=\"https:\/\/greklandallexclusive.com\/2019\/01\/31\/grekisk-gourmetmat-pa-frammarsch\/\" target=\"_blank\">h&auml;r<\/a>, och <a rel=\"noreferrer noopener\" aria-label=\"h&auml;r (&ouml;ppnas i en ny flik)\" href=\"https:\/\/greklandallexclusive.com\/2019\/03\/04\/grekland-genom-kristallkulan-1-turismen\/\" target=\"_blank\">h&auml;r<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Det handlar om konservatism, helt enkelt. V&auml;ldigt f&aring; greker vet att uppskatta f&ouml;rs&ouml;ken att laga modern gourmetmat baserad p&aring; grekiska traditioner, de som g&ouml;r det &auml;r som regel unga och har inte r&aring;d att  &auml;ta p&aring; de restauranger som serverar s&aring;dan mat. Den medel&aring;lders v&auml;lbest&auml;llda publiken vill ha fat &ouml;verlastade med genomstekt k&ouml;tt eller &ouml;vergrillad fisk. Starka kryddor h&aring;ller bara turkar p&aring; med. Att uppskatta rosa lammk&ouml;tt, r&ouml;tt n&ouml;tk&ouml;tt eller tonfisk med den perfekta innertemperaturen 37 grader celsius &auml;r inte grekiskt utan ses med stor misst&auml;nksamhet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Det handlar ocks&aring; om oss och v&aring;ra krav och f&ouml;rv&auml;ntningar. Jag kan nu avsl&ouml;ja att de flera av de matbilder som illustrerar artikeln om grekiska turistf&auml;llor har tagits av charterturister som vill f&ouml;reviga sina restaurangupplevelser. Om du blir s&aring; glad av en blek pizza med gr&auml;ddost, fuskskinka och burkananas att du tar en bild p&aring; den och l&auml;gger up p&aring; Facebook s&aring; bryr du dig nog inte s&aring; mycket om vad du &auml;ter. Fr&aring;gan &auml;r hur glad du hade blivit om den hade serverats p&aring; en restaurang i Sverige. Fotograf ok&auml;nd.<\/figcaption><\/figure>\n\n\n\n<p class=\"has-drop-cap wp-block-paragraph\">Vi svenskar har alltid varit nyfikna p&aring; utl&auml;ndsk mat och utl&auml;ndska r&aring;varor. I v&aring;r traditionella mat kryllar det av exotiska inslag som saffran, kanel, peppar, bananer, kakao, kaffe, vanilj och russin. V&aring;r restaurangkultur var det d&auml;remot synnerligen illa st&auml;llt med till en bit in p&aring; 90-talet. Alkoholpolitik och alkoholkultur, halvfabrikat, rikskuponger, skatteregler, yrkesidentiteter och andra faktorer skapade en tunn och smakl&ouml;s soppa av restaurangupplevelser, som bara br&ouml;ts av ett f&aring;tal lyxrestaurangr och n&aring;gra ambiti&ouml;sa invandrare. Det &auml;r ungef&auml;r d&auml;r det grekiska restaurangk&ouml;ket befinner sig i dag, men utan invandrare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L&aring;t oss studera hur det ser ut i elitserien &ndash; Guide Michelin. Eftersom Grekland har ungef&auml;r lika m&aring;nga inv&aring;nare som Sverige och en liknande demografi s&aring; borde det g&aring; att j&auml;mf&ouml;ra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Det &auml;r dyster l&auml;sning. Totalt finns 86 svenska krogar och 18 grekiska i Guide Michelin. I synnerhet om ingen av dem ligger utanf&ouml;r Aten. I Sverige finns numera utm&auml;rkta restauranger lite varstans. Jag vill minnas att det fanns en restaurang p&aring; Mykonos som hade en stj&auml;rna. Det &auml;r inte s&aring; sv&aring;rt att gissa varf&ouml;r den blev av med stj&auml;rnan. Att hyra en enrummare p&aring; Mykonos kostar lika mycket som en paradv&aring;ning i Aten med utsikt &ouml;ver Akropolis. D&aring; &auml;r det sv&aring;rt att beh&aring;lla bra kockar. Foto: John G&ouml;ransson.<\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Det kanske kan verka larvigt att anv&auml;nda Guide Michelin som v&auml;rdem&auml;tare p&aring; restaurangkultur. De flesta av oss &auml;ter v&auml;l &auml;nd&aring; aldrig p&aring; s&aring;dana st&auml;llen? Det &auml;r tv&auml;rtom en mycket bra v&auml;rdem&auml;tare. Den ber&auml;ttar hur m&aring;nga riktigt ambiti&ouml;sa kockar och kr&ouml;gare det finns i landet. Den ber&auml;ttar hur m&aring;nga plantskolor det finns f&ouml;r unga kockar. Hur m&aring;nga restauranger det f&ouml;rmodligen finns som inte &auml;r med i Guide Michelin, men som serverar ambiti&ouml;s och god restaurangmat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\n\nI Grekland, i synnerhet utanf&ouml;r Aten, &auml;r det sv&aring;rt att beh&aring;lla bra kockar. De f&ouml;rsvinner g&auml;rna utomlands. S&aring; var det l&auml;nge i Sverige ocks&aring;, Numera k&ouml;ar unga duktiga kockar fr&aring;n hela v&auml;rlden f&ouml;r att f&aring; jobba hos Franz&eacute;n, Berlin, Myllim&auml;ki eller Crespi. Trots kyla, bostadsbrist, vinterm&ouml;rker och h&ouml;ga priser.\n\n<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Framf&ouml;r allt ber&auml;ttar Guide Michelin varf&ouml;r int&auml;kten per turist minskar i Grekland. Foodies &auml;r beredda att betala v&auml;ldigt mycket pengar f&ouml;r bra mat. Att &auml;ta p&aring; en restaurng med tre stj&auml;rnor i Guide Michelin kostar <strong>minst <\/strong>2 000 kronor per person, plus dryck. Den som lade upp den d&auml;r bilden p&aring; pizzan betalade f&ouml;rmodligen runt en hundring f&ouml;r den och det var den inte v&auml;rd.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Hur kan Grekland &auml;ndra p&aring; detta? Genom att f&ouml;rst&aring; att allt inte &auml;r bra bara f&ouml;r att det &auml;r en del av den grekiska traditionen. Att det g&aring;r att laga modern och fantastisk mat av grekiska r&aring;varor. Genom att v&aring;ga vara nyfikna p&aring; nyheter. Den grekiska staten borde finansiera en rej&auml;l mediekampanj med syftet att lyfta kokkonsten och restaurangkulturen i landet. De statligt &auml;gda restaurangskolorna borde inriktas till hundra procent p&aring; gastronomi och till noll procent p&aring; att tillgodose behovet av kockar till all inclusivehotell. Det tycks vara tv&auml;rtom.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vad kan vi turister g&ouml;ra? Vi kan leta efter restauranger med unga ambiti&ouml;sa kockar och kr&ouml;gare. Vi kan strunta i st&auml;llen som steker s&ouml;nder k&ouml;ttet och inte v&aring;gar krydda maten. S&auml;g &auml;rligt vad du tycker, &auml;ven om du r&auml;dd att s&aring;ra n&aring;gon. Greker t&aring;l kritik. Om du har dubbla m&aring;ttastockar n&auml;r du g&aring;r p&aring; krogen &ndash; en f&ouml;r Sverige, en f&ouml;r Grekland &ndash; s&aring; kommer du inte att f&ouml;ra handlingen fram&aring;t.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vi har v&auml;nner som &auml;ger restauranger d&auml;r vi aldrig &auml;ter. Vi har v&auml;nligt f&ouml;rklarat f&ouml;r dem varf&ouml;r vi inte g&ouml;r det. Vi har ocks&aring; v&auml;nner som har restauranger d&auml;r vi ofta &auml;ter. De vet ocks&aring;  varf&ouml;r vi g&ouml;r det. Men vi talar om f&ouml;r dem n&auml;r vi tycker att de kan f&ouml;rb&auml;ttra saker och det uppskattar de att h&ouml;ra. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Det &auml;r faktiskt bland det b&auml;sta jag vet. Att komma in p&aring; en krog och se kocken komma ut utr k&ouml;ket och s&auml;ga &rdquo;John! Du m&aring;ste prova v&aring;r lammstek!
