Jag ins&aring;g att vi aldrig hade rest tillsammans, bara vi tv&aring;, och att vi inte skulle bli yngre. D&auml;r b&ouml;rjade man odla musslor p&aring; 80-talet och nu har det vuxit till en storindustri. Den st&ouml;rsta delen av musslorna (omkring 80 procent) exporteras, framf&ouml;r allt till Italien. Foto: John G&ouml;ransson.<\/figcaption><\/figure>\n\n<p class=\"wp-block-paragraph\">Det var f&ouml;rst &aring;ret efter, n&auml;r jag gjorde ett nytt bes&ouml;k i Thessaloniki, som jag f&ouml;rsta g&aring;ngen &aring;t midopilafo. Efter en l&aring;ng promenad genom stan slog jag mig ner vid ett bord i en av saluhallarna och best&auml;llde. Den var uts&ouml;kt, och snygg dessutom!<\/p>\n\n<p class=\"has-drop-cap wp-block-paragraph\">Jag har tillagat midopilafo m&aring;nga g&aring;nger sedan dess, b&aring;de i Sverige och i Grekland. Eftersom jag &auml;r van vid att tillaga b&aring;de bl&aring;musslor och risotto var inl&auml;rningskurvan ganska brant. F&ouml;rsta g&aring;ngen jag lagade till den i Grekland ins&aring;g jag att de grekiska musslorna &auml;r mycket saltare &auml;n dem vi k&ouml;per i Sverige, s&aring; det blev p&aring; tok f&ouml;r salt. Nu vet jag att grekiska musslor m&aring;r b&auml;st av att st&aring; n&aring;gon timme i iskallt vatten, med bara en gnutta salt, innan de rensas och tillagas. D&aring; blir det perfekt!<\/p>\n\n<p class=\"wp-block-paragraph\"><em>Tids&aring;tg&aring;ng: ca tv&aring; timmar, varav cirka en timme matlagning.<\/em><\/p>\n\n<p class=\"wp-block-paragraph\">H&auml;r kommer mitt recept p&aring; midopilafo. Rensa musslorna, ryck bort &ldquo;Sk&auml;gget och skrapa bort stora &ldquo;kalkmaskar&rdquo; (det &auml;r inte maskar, det &auml;r kalk). Du beh&ouml;ver inte vara s&aring; noga med detta. Sl&auml;ng musslor som &auml;r trasiga eller som inte sluter sig n&auml;r du knackar p&aring; skalet (de beh&ouml;ver inte sluta sig helt, du vill bara veta om de lever).<\/li><li>Hacka l&ouml;k, vitl&ouml;k, chili, tomat och dill.<\/li><\/ul>\n\n<p class=\"wp-block-paragraph\">&nbsp;<\/p>\n\n<h3 class=\"wp-block-heading\">Tillagning<i id=\"cmtoc_anchor_id_3\" class=\"cmtoc_invisible_anchor\"><\/i><\/h3>\n\n<ul class=\"wp-block-list\"><li><p>H&auml;ll olivoljan i en stor kastrull och hetta upp. Fr&auml;s l&ouml;k, vitl&ouml;k och chili p&aring; medelv&auml;rme tills l&ouml;ken &auml;r mjuk och b&ouml;rjar f&aring; lite f&auml;rg.<\/p><\/li><li><p>Sl&auml;ng ner den hackade tomaten och l&aring;t den fr&auml;sa med i n&aring;gon minut.&nbsp;<\/p><\/li><li><p>H&auml;ll i vin, ouzo och h&auml;lften av dillen i kastrullen, dra p&aring; full v&auml;rme<\/p><\/li><li><p>N&auml;r det kokar f&ouml;r fullt sl&auml;nger du ner musslorna och l&auml;gger p&aring; locket.<\/p><\/li><li><p>L&aring;t koka ordentligt i tv&aring; minuter. Du kan skaka om grytan ett par g&aring;nger, s&aring; att musslorna byter plats med varandra.<\/p><\/li><li><p>Ta grytan av plattan och h&auml;ll av spadet genom durkslaget, ner i den mindre kastrullen. Plocka ut musslorna ur durkslaget, sl&auml;ng tillbaka resten i den stora kastrullen. Hit kan du f&ouml;rbereda, men du kan inte v&auml;nta f&ouml;r l&auml;nge med att avsluta, f&ouml;r d&aring; blir musslorna tr&aring;kiga.<\/p><\/li><li><p>Du ska nu ha en liten kastrull med varm buljong, en stor med &ouml;vriga ingredienser och en bunke med de kokta musslorna. St&auml;ll den lilla kastrullen p&aring; en platta och h&aring;ll buljongen varm p&aring; l&aring;g v&auml;rme.<\/p><\/li><li><p>L&auml;gg riset i den stora kastrullen och l&aring;t det fr&auml;sa p&aring; medelh&ouml;g v&auml;rme n&aring;gon minut.<\/p><\/li><li><p>H&auml;ll h&auml;lften av buljongen &ouml;ver riset. krydda med h&auml;lften av den hackade dillen och gurkmejan. Smaka av och se om du beh&ouml;ver salta, det beror p&aring; s&auml;ltan i musslorna.<\/p><\/li><li><p>L&aring;t det koka ganska livligt, utan lock, under omr&ouml;rning. H&aring;ll p&aring; ny buljong vartefter den kokar in&nbsp;och smaka av. Det brukar ta ungef&auml;r 20 minuter, men det kan variera. Om du ser att buljongen inte kommer att r&auml;cka kan du fylla p&aring; med vatten.<\/p><\/li><li><p>N&auml;r riset &auml;r n&auml;stan f&auml;rdigt och all buljong har kokat in (riset ska vara lite al dente) sl&auml;nger du tillbaka musslorna och l&auml;gger p&aring; locket. L&aring;t det st&aring; i en minut, s&aring; att musslorna blir varma. Dra ner v&auml;rmen s&aring; att inte riset br&auml;nner fast i botten.<\/p><\/li><li><p>V&auml;nd &ouml;ver risotton i en stor sk&aring;l, s&aring; att riset hamnar ovanp&aring; musslorna. blanda om lite f&ouml;rsiktigt, s&aring; att musslorna fylls med ris. Str&ouml; &ouml;ver resten av den hackade dillen och riv &ouml;ver citronzest.<\/p><\/li><li><p>Servera i djupa tallrikar, g&auml;rna med en sallad bredvid. L&aring;t g&auml;rna g&auml;sterna servera sig sj&auml;lva, s&aring; g&ouml;r man i Grekland.
